Wild Honig



A walk in the western mountain ranges, such as the Wasatch Mountains or Rocky Mountains, in late spring and summer offers a mosaic of color through native wildflowers. It starts early with flowering trees but quickly spreads to the ground with violets, delphinine, snowdrops, lilies, columbine, and daisies. As the color comes to life, so does a world of bees, ants, and other insects that facilitate the continuation of this beauty from year to year. “Wild honig” was a treat that I was introduced to by my German neighbor a few years ago. Herr Thomas had an active swarm of honeybees. As seasons changed, he moved this hive to various locations for pollen collection.

The result was a sweet diversity of flavors complements of Mother Nature. It is really incredible how unique the flavor of honey will be based on where the bee captures the raw product. I never tired of this generous gift and learned many ways to enjoy honey. It is wonderful on toast, in yogurt, or as an ingredient in salad dressing. Beauty creating more delicious beauty!
