Planting The Summer Feast!


It’s that time of year to think about all those refreshing treats that are provided from our garden. I especially enjoy adding fresh herbs to the barbeque rack as I prepare the evening meal or mix them with some olive oil, white wine vinegar and lemon to prepare a light dressing for the salad that includes fresh grown lettuce, radishes, and spinach early in the summer. As summer progresses, the bounty increases to fresh cucumbers, tomatoes & tomallitos, and eggplant. All this from my “barrel garden” on my patio!


Last weekend, I was fortunate to visit with my parents. Now they really plant a garden – corn, potatoes, beans, carrots, beets, cabbage, melons, squash (all types), dill, romaine lettuce, asparagus, rhubard as well as all the items I have in my patio garden. From mid-July until the first deep frost of September, their meals are a smorgasbord of vegetables. I always make sure I am there at the high of the season to enjoy their efforts and help with some of the preserving for the winter months.


My parents put a great deal of love and effort into their garden. And its bounty is enjoyed by neighbors, friends, bees, and the occasional passing deer. In addition to visual representation of the gardens described above, I offer a recipe for your future enjoyment!
